The wine is made according to a bold and modern interpretation of Sangiovese. The grapes undergo a 100% whole-bunch semi-carbonic maceration in small stainless steel tanks. During this process, which lasts about two weeks, they are worked completely hands-off: no remontages or mechanical movements take place, so that the wine retains its fresh and pure fruit expression.

After the first fermentation, the grapes are gently pressed with a small hydraulic press (yield < 50%). The remaining sugars then provide a short second natural fermentation.

The wine is then aged for 10 months in used French oak barriques, which gives structure without overpowering the fruit.

Cosmonovo represents a new, energetic style of Sangiovese: vibrant, elegant and made to be enjoyed at any time.

Falisca

Falisca is the family wine estate of our good friend Andrea Pizzolato, who has played an indispensable role within Devinita since our very first trip to Italy. The estate is located in the medieval town of Certaldo in central Tuscany. For more than 70 years, the Pizzolato family has diligently tended its vineyards here. Today, the new generation continues this tradition, producing wines that reflect the character, history and beauty of their Tuscan home.
