iCustodi’s Aetneus is produced from grapes sourced from vines up to 90 years old, harvested by hand around mid-October. After careful selection, the grapes are brought to the winery in shallow crates. Here they are gently crushed after destemming about 80% of the bunches. Maceration takes place for 12 days in steel vats at a temperature of 25-28°C (77-82°F), followed by malolactic fermentation in tonneaux. The wine matures for a minimum of 36 months, of which ⅔ in used and ⅓ in new tonneaux. Finally, it undergoes another 24 months of aging in bottle.

The wine has an intense ruby red color.

On the nose, it is ethereal and intense, with distinct hints of ripe fruit and tobacco.

On the palate, the wine presents itself elegantly and harmoniously, with a considerably long finish and pleasant tannins.

Serving temperature: 18-20° C
